Herby Caulishoots

This is a delish dish for sharing. Leave the Caulishoots whole, they are so good simply roasted with some herbs and a tangy tahini dressing!

You'll need:

Caulishoots washed and dried

Drizzle of olive oil 

Herbs of choice – woody herbs like rosemary & thyme are great

Pinch of salt & pepper

Tahini dressing 

1 tbsp of tahini 

1 lemon – juice and zest (use it all) 

1 to 2tbsp of yoghurt (I used Alpro unsweetened soya) 

1 garlic clove 

Pinch of salt 

Drizzle of olive oil 

What to do:

  • Pop on your oven to 180
  • Place all your Caulishoots on a roasting tray.
  • Drizzle with olive oil, your herbs and salt & pepper.
  • Get your hands in and give them a good massage.
  • Pop them in the oven for 20mins or until golden brown, cooked but still firm.
  • Whist the Caulishoots are cooking blitz up your dressing.
  • Pop all on the ingredients in a small blender or bowl and mix until super smooth.
  • Have a taste – tweak if needed.
  • Take out the Caulishoots and drizzle with your dressing.
